Pulled pork jackfruit with slaw


1. Drain and rinse the canned jackfruit. Cut off the core.

2. In a large bowl whisk together the spices: brown sugar, smoked paprika, garlic powder, onion powder, chilli powder, pepper and salt.

3. Heat a pan over medium heat. Add oil. Once hot, add the jackfruit. Cook for about 3 minutes until jackfruit begins to yellow.

4. Flip jackfruit, pour BBQ sauce over top and give a gentle stir. Adjust heat to Medium-low. Cover and let simmer for about 20 minutes.

5.While jackfruit simmers make your broccoli slaw by whisking together mayo, vinegar, sugar, salt and pepper. Toss with the broccoli slaw and set aside.

6. Once jackfruit is done shred with 2 forks. Increase heat to medium-high and cook for a few more minutes.

7. Remove from heat and assemble your sandwhich!


2 20oz cans of jackfruit (in brine or water)

2tbs brown sugar

1tsp smoked paprika (regular works as well)

1tsp garlic powder

1tsp onion powder

1tsp chilli powder

1/2tsp sea salt

1/2tsp ground black pepper

(Optional: 1/4 tsp cayenne pepper)

1-2 tbs oil ( or avocado)

1 cup thinned BBQ sauce (3/4 BBQ sauce + 1/4 cup water)

To make the Broccoli Slaw:


1 12oz bag broccoli slaw

1/2 cup vegan mayo

1tbs vinegar (white, apple or coconut ect)

1-2tbs sugar

1/2tsp ground black pepper

1/4tsp salt
